Weekend Festivities

The "End of the Year Bash" this year was a concert with He Is We, Parachute, and  The Ready Set... We invited Paul and Tori (Scott's siblings) to come up and go to it with us! The stadium was actually pretty full, I was surprised. One of the bands lost all of his equipment in a shipment. I felt so bad for him! He still managed to pull it off! And we left early so we didn't hear Parachute...



But the highlight of the whole thing was when He Is We played "All About Us", our wedding song! I seriously love that song! It brings back so many good memories. We actually danced to that song on our second or third date. I thought Scott was going to kiss me so I got all nervous and shy! haha but he didn't that time. Then we went back to the same dance room and danced to that song after we got engaged. And we probably kissed the entire time! ;) Then it was the song that we danced to for our first dance as Mr. and Mrs. So it was extra special to hear it live!
After the concert we munched on some ice cream and popcorn and watched the classic, Nacho Libre. Man that show is great and I laugh so hard every time. But my favorite part about the movie is how much Scott laughs. Him laughing is probably my favorite thing in the whole world! When it happens I wish I could freeze time and bottle up that moment forever!!! (sappy, sappy, I know, sorry)
It was fun hanging out together! I'm so glad they were able to make it!

Thank Goodness It's Friday!

My goodness, another long week! The weeks have been doing that lately and I'm not a fan. It's probably because the semester is almost over and we are seriously itchin' to be DONE! Classes are over now so its just tests left! I have three more tests and a paper, and Scott has one test!! Then we are done!! This is enduring to the end at it's finest for us!

But its the weekend, HALLELUJAH!!! 

This weekend we have got some serious studying to do, sleeping in, a Temple Trip and breakfast somewhere (we haven't decided yet), cleaning, exercising, and a little project I started a few weeks ago! I haven't been able to work on it since because we have been so busy. I got inexpensive, plain, place mats just from wal-mart and I am painted a chevron pattern on them to spice them up a little bit! Super cute!! I will post about that when it is done, and i'm so excited to show you! Until then....

Homemade Chicken Nuggets

Recent new recipe in our house. It was pretty easy and tasty!

HOMEMADE CHICKEN NUGGETS:

1 lbs boneless chicken breasts
1 egg
1 cup whole wheat breadcrumbs
1/4 cup grated parmesan cheese
1/2 tsp paprika
1/2 tsp garlic powder
salt and pepper to taste
cooking oil

1. Chop the chicken into small chunks and sprinkle with salk and pepper.
2. Lightly beat egg in a bowl.
3. In another bowl mix together: breadcrumbs, cheese, paprika and garlic powder
4. Dip the chicken chunk into the egg, covering it well. With that same hand (your wet hand) drop the egg covered piece into the dry mixture. With your other hand (the dry hand) sprinkle dry mixture over the chicken. Thouroghly cover. Then set aside on a plate until you are ready to cook. Do this process until all chicken pieces are covered. (It goes a lot more smoothly if you have a "wet hand" and a "dry hand", the mixture will go on easier and stay better)
5. Heat a thin layer of oil in a frying pan to medium/low heat. Cook on each side for about 5 to 7 minutes, or until brown. Cut open a few pieces to make sure that they are fully cooked. Once they are done, let cool on a paper towel to soak up any extra oil. then..
6. ENJOY with whatever dipping sauce is your favorite, BBQ Sauce, Ranch, Ketchup, Honey Mustard...

This time last year...

This time last year....

A girl named Arianna decided to live in Logan for the summer. The semester was about over, she found an apartment and got a new job. She decided to keep working on campus during the day and then at Texas Roadhouse at night. She really liked a boy named Scott who had kissed her a week earlier. She realized she didn't want to spend the summer apart, even though it was just an hour away. That was an hour too far.

This time last year...

A boy named Scott was trying to find a job in Logan. The semester was almost over and his plan was to go home to Kaysville to sell Direct TV. He didn't really want to do that but he needed the money. He really liked this girl named Arianna. So much so that he dipped her by a creak, held her there for about a minute and then kissed her a quick swift kiss. But oh was it good. :)

Here's to a year of adventure so far and more to come with my Best Friend for life! ;)

Game-Treats-Movie

We watch a lot of movies... because of the cold weather. The easiness of it. And we like it. Its fun to cuddle on the couch. ;) But sometimes you just have to mix it up a little bit, add some excitement!
Scott had a great idea for our date night. Because we had left overs we saved money and ate at home. Then we gave ourselves a 10$ budget to find a new game and a treat! So we ventured to Wal-Mart and perused the game isle. We finally decided on Phase 10. That's a good classic that you just have to have. Then on the way to find a treat we got distracted by the candles and the little music stand that you push the button and get a sample of the CD. Ya know what I'm talking about?? Well it turned into a game. One person would choose and then the other person had to guess which one they pushed. It was so fun! And we couldn't help but start dancing when the good music came on!
It reminded me of when we first started dating. Care-free and super flirty! ;) One of our firsts dates, after we got ice cream, we went to wal-mart and smelled candles. haha and just messed around and it was so much fun!! That'w how we roll around here!
Scott was in charge of the treat so it was no surprise that we got ice cream and birthday cake Oreos! ;)

We did watch a movie too, but the point is, that's not the only thing that we did for our date night! We mix it up by adding new fun things!! Whatever night date night lands on, its my favorite night of the week, by far!!

Late Night Drive

Last night we pulled out of Logan at about 10 pm. Which is about the time that we hit the hay on most nights! The words, "We haven't done anything like this for a while, what an adventure!" came out of Scott's mouth a few times!

Our destination: The Salt Lake Airport.
Our Purpose: to surprise the family, who thought we weren't coming and to welcome home Paul!

The flight was supposed to come in around 11:30 pm, but to follow the trend of cancelled and late flights it really didn't get there till 1:00 am! So the only logical solution when you are in an airport at 1:00 am is to lay on the floor and sleep! (or smile for a picture)

Once he came we were all excited, everyone took turns huggin', we took pictures, but the fun didn't end there! We were all a little too excited to go to bed right when we got home so we stayed up till about 3:00 am talking! In Africa time it was in the morning so Paul was up and at em like he was just waking up! Well we have driven to Salt Lake and back twice already and we will be back to Kaysville tomorrow. wooowee! That's a lot of driving and we are feeling slightly tired today, but it was definitely worth it! I might have some dark bags under my eyes, but that's okay, it shouldn't last long! ;)


It wouldn't be enough without a little awkwardness from Scott because he likes to say awkward things and get a reaction out of people. So he asked Paul, man how do you feel about all the changes around here?, "Caleb has a lower voice, Tori is getting ready to start dating, and I am a married man and this women sleeps in my bed" haha uh.... :/ it got a little quiet in there and my face was probably the shade of a cherry tomato. "well this is a little weird, on that note, Goodnight everyone!!" haha it was funny. There are a lot of changes going on but its a wonderful time and such a great family and i'm so grateful I can be apart of!!

I almost didn't even realize it was WEDNESDAY..

Today is Wednesday huh? I kinda forgot that it was. Yesterday felt like Thursday. Why? I don't know! Maybe its cuz I am so stinkin' tired. Why? I don't know. I blame it on school I guess. I am Queen of procrastination, meaning I waited till the night before, starting at 6:30, to write an 8 page paper on the worst movie ever! haha don't ever watch "American Graffiti", it's slightly a waste of your life. There wasn't really a story line. But oh well, it has been watched by the hubs and I. and the paper is written, so all is said and done! 
On a more positive note....Lets talk about how wonderful this Wednesday is. Lately we have been lovin'...

1. Time spent with family! The previous post talks about the details. But we are just so grateful for family! After getting married you get two families! The more the merrier!! :D

2. We have also loved that we didn't have to go anywhere to see family, they came to us! We got to show off our cute little apartment! It was so much fun to have company!

3. This is just me...but yesterday I had a serious craving for a donut...or two. Oops! But let me tell ya, I NEVER crave donuts. It was weird but I completely enjoyed it!!

4. We are sooo excited to welcome home Paul (Scott's brother who has been on and LDS mission in Africa) tonight! It was supposed to happen last night but his travel was delayed so we are heading to the airport tonight! I'm excited to meet my new brother for the first time in person!

5. The semester is almost over, and the thought of it is so exciting! But I can't think about school past that, cuz its just not good. Too much left, too much money. boo.

6. Scott is so good at finding new songs. He found this one one yesterday that we love. It's a rap song, clean of course, but that's how we roll around here. We like to think of ourselves as gansters. Well in reality Scott gets that title, more than me. I married a Gansta' and boy are we in love! ;)

7. Scott had a dream last night that he was playing Spiderman with our little boy. He said, "not in spiderman outfits, but we were climbing walls and stuff". That thought brought pure joy to me instantly! I can't wait to watch him be a Dad. It made me want to pause and stay in that moment for a little while. Cuddling in bed together. I didn't want to get up!

Life is good. We have so much to be thankful for and happy about! We'd love to hear what makes your Wednesdays wonderful! Let us know!

Family

We had such a fun weekend!! It was our turn to have company over instead of driving to visit the fam! We realized how small our apartment really is but that we've done a good job keeping it clean and cutely decorated, which is music to my ears to hear! I have always wanted to have a house that people feel comfortable in! It may be a little small but we got most of it down!

We also realized that its hard to keep a three year old busy and occupied on a rainy, cold day in Logan in a small apartment! A trip to DI for some toys helped with that! On Saturday night we went out to eat at one of our faves; El Toro Viejo. It is a gem! We love it!


Just being together, whether we are cooking, talking, laughing, playing games or whatever, it is soo much fun! Thanks for visiting us guys!! We had a blast! :D
And yesterday we had more visitors! My parents and sister stopped by on their way home from a trip to Idaho. We went out to eat, cuz that's what you do with family and friends! Talked and laughed and had a grand ol' time! We sure do love our family and are so grateful for them!!
Speaking of family, we are anxiously waiting for the arrival of Paul, Scott's brother who has been in Africa serving a mission for the Church of Jesus Christ of Latter Day Saints. I have never met him in person so this is even more exciting!! It will be fun to have everyone together!

Happy Friday!

Holy Smokes did it feel like this week was super slow or what??! GEEZ! Well its finally Friday! and its a fairly nice day! We had that weird cold front come in, which was no fun! But Spring is one of my FAVES so i'm seriously enjoying this weather for as long as it lasts!! During Spring we get Easter, General Conference, blossoming trees, green grass, blue skies, and pretty flowers! What else could you ask for!



side note: My sister in law shared these sweet apps with me the other day and I've been going crazy with em! They make your pictures look sweet (like the ones above). Seriously sooo fun! Yummy Recipes


INGREDIENTS: 
Basil Pesto
Alfredo Sauce
1 Chicken Breast (cooked and cubed)
Mozzarella Cheese
Spinach (optional) 
 
Pizza Crust (recipe below)
 
2 1/2 cups Flour
2 3/4 tsp baking powder
1 tsp. salt
1 Tbsp olive oil
3/4 to 1 cup water
 
Mix dry ingredients together. Then slowly add wet ingredients. If too sticky, add more water. Kneed dough until smooth and elastic.
 

After the crust dough is prepared, form into a circle onto a greased baking sheet. Spread about 1 to 2 tablespoons of pesto onto the dough. It should have just a thin layer covering the dough. Then spread about 1/2 cup of already prepared Alfredo sauce. We just use the store bought bottle, and it takes great! Then top with cooked and cubed or shredded chicken. ( I boil my chicken, already cut up, because it cooks faster, for about 15 minutes.) Then add chopped spinach. Spread mozzarella cheese on the top. We like cheese so we add a good helping, about 1 cup to 1 1/2. Cook at 350 for about 12 to 15 minutes. ENJOY!

INGREDIENTS:
1 box Giant Shells
15 oz. Ricotta Cheese
1/2 Basil Pesto
1 cup Mozarrella
1 large egg
2 cups Spinach
1 jar Red Sauce 
 
Cook the shells via the box instructions. Mix the ricotta, pesto, mozarrella, egg and spinach. Stuff the shells until they open slightly. Pour about a cup of red sauce on the bottme of a baking dish. Then place stuff shells close together in a baking dish. Pour remaining sauce on top. Bake at 350 degrees for about 30 minutes. Or until the suace is bubbling. Enjoy!
 

INGREDIENTS:
2 Chicken Breasts (cooked and shredded)
1 cup Onions (chopped)
2 Garlic Cloves
1 tsp dried Oregano
1 tsp ground Cumin
1/2 tsp Salt
1/4 tsp Cayenne Pepper
1 (15oz) cans of Corn
2 (15 oz) cans Great Northern Beans
Green Chilies
2 (15 oz ) cans Chicken Broth
3 Tbsp Lime Juice
2 Tbsp Fresh Cilantro
 
Boil the chicken until it is white and cooked. Remove chicken from water and shred it. Then add all of the above ingredients to the chicken water. Once shredded, add chicken. Let simmer and heat up. Serve with fresh cilantro and crushed tortillas on top! Perfect for a cold night!
 
INGREDIENTS:
Pita Bread
Romaine Lettuce
Roma Tomato
Red Onion (half)
Cucumber (half)
1 Chicken Breast
Feta or Mozarrella Cheese
Greek Dressing: 3 Tbsp ed wine vinegar, 1/2 cup olive oil, 2 cloves garlic, 1 lemon, 2 Tbsp oregano
 
Wash and cut lettuce into chunks. Add cut tomato, cucumber, and red onion. Marinate the chicken in half of the prepared Greek Dressing. Cut the chicken into chunks and cook with the dressing used to marinate. Toss the salad with the rest of the Greek Dressing. Top the salad with cooked chicken chunks. Heat pita half's in either the oven or toaster ( the toaster is fast and works great). Put the salad into the pita half and eat! You'll love the fresh, healthy flavors!!  

 INGREDIENTS:
Taco Shells (18 tp 20)
2 lbs Hamburger
1 small Onion (diced)
1 can Refried Beans
1 can Green Chilies (drained)
1 can Tomato Sauce 
a little more than 1/2 package taco seasoning (to taste)
cheese (of your choice)

Brown hamburger until all pink is gone. Drain any excess grease. Add refried beans, tomato sauce, green chilies and taco seasoning. Mix well and cook until it is heated through. Fill the taco shells with about 2 large scoops of mixture. Place into a baking dish, lined so they are standing up. Sprinkle cheese on top of the mixture. Place in a 400 degree oven for about 10 minutes or until cheese is melted. After cool, top with your favorite taco toppings (lettuce, tomatoes, salsa, etc.) and Enjoy! 

INGREDIENTS: (Serves Two)
1 Chicken Breast (cut in half so you get two thin pieces)
BBQ Sauce
Pepper Jack Cheese
Bacon

Place the chicken on a lightly greased cookie sheet into a 350 degree oven.Smother the chicken with your favorite BBQ sauce. Cook for about 25 minutes, or until chicken is cooked. Separately cook the bacon. 
( You will be able to fit about two to three pieces of bacon per piece of chicken.) Once the chicken and bacon are both fully cooked, place the bacon pieces on top of the chicken. Pour more BBQ sauce on top of bacon. Then top with a slice of pepper jack cheese . Place back in the oven until the cheese is melted. Then its ready to eat! This dish is delish, super fast and easy!

"Logan's Best Kept Secret" Date Night!

Our weeks get super busy but we fit a date night in sometime during the week. This was a last minute, can't do it any other night of the week, date! Scott served a couple at Olive Garden who are owners of a restaurant. So he told me a while back that we would go there but he didn't tell me where it was! It was a surprise. I love surprises but I am also very curious, impatient and relentless. But this time I knew I needed to just go with the flow!
We got ready and started driving, and I asked one last question, more teasing than serious.
 "Its not at a gas station right??" 
Then we laughed and joked about that for a minute. 
BUT THEN Scott pulled into the gas station and said, "lets get some gas, we're running a little low"
 "Babe, we are almost full! ...Oh my heck, it IS at the Gas Station huh??"  



hahaha Logan's Best Kept Secret right there folks! It is a little Mexican Restaurant tucked inside a gas station. There are no signs out front or anything. I don't even know if it has a name! You pick your meat, then how you want it. A salad, burrito, enchiladas, quesodilla, or taco. Its all 6.50. It was actually pretty good! I liked it!
We packed it all up and ate it at the park since the weather was so nice! The best part about it all is that it really was in a Gas Station. Who would have ever thought!


We ended the night with a joyful find!! Scott's "Beloved Birthday Cake Oreo's". We have been searching and searching and finally found them!! He was so happy! Seriously, once you have them, you will never go back to the normal ones. They are divine. and they smell divine. They are at Walmart but probably wont last long! So hurry go get yours, you wont regret it!

Easter Weekend!

We had such a fun time with my side of the Family for Easter! It was loaded with eggs, candy, good food, and good company. I realized that I eat hard boiled eggs about once a year, and thats on Easter! I love a bowl full of stained colorful white and yellow! YUM! and some sugar cookies in the morning too! ;)
So we started the weekend with rock climbing with Kaeley and Trevor! The boys (Boston and Tucker) came with us which was so fun! Boston who is only 3 years old is a rock climbing crazy! He does so good and isnt even afraid when he gets high up on the wall! I was so impressed!

After climbing we stopped at Sonic for a lemon berry slush! During high school Kaeley and I would go all the time during happy hour to get one! We loved them! That was the first time i've had one since then. It might become a regular event now! I was reminded how good they are!
That night we stayed up sooo late! The latest we have stayed up since we have been married. (our bedtime now is around 10) We started the new James Bond movie, Skyfall, at about 10:30 and it didnt get over till after 1am! I couldn't last through the whole thing at all, but Scott did!

Now to celebrate EASTER:
Saturday we started the day with some yard work. Scott is a "pruning man" now so Dad recruited him to do the 2 apple trees and pear tree. Since they have never been pruined, it was quite the job! The sun and good weather was so nice!
All the family came over and we dyed easter eggs, had an Easter egg hunt, decorated cupcakes and cookies!

The adults also did a hunt. Well it ended up just being Tawnette, Kaeley and I while Scott and Nesha hid the eggs (hard, might I add, like under rocks burried in the dirt!!)  
 
 Before we started, Kaeley handed me a bag to collect my eggs with. I examinded it and found a huge rip all the way down the side! haha sisters. The things we do. Holy smokes do we get competitive as sisters!!
 
Church was great as always! Remembering the true meaning of Easter is so important.
 
Even though we ended the week with me getting sick and having to take monday off to sleep and recover, it was still worth it!
